The directions also direct you to wait until the brownies were completely cooled to cut and try, but I couldn't wait. They smelled so heavenly while baking. I waited about 10 minutes after taking them out of the oven to try a bite and it was yummy and rich tasting, but not very sweet. I was a bit disappointed. Then I decided to wait per the instructions until the brownies had cooled completely and when I tried them again a couple of hours later, they were so much better. I'm so happy with this purchase that I can't wait to order again. It’s unfortunate that the reputation of the words “Soluble Fiber” has been tarnished by companies mislabeling their IMOs as "Soluble Fiber". As a result we may explore updating our packaging to say “Resistant Dextrin”, even though that is a less recognizable name to the average person. As you’re aware, many (most, even) “keto-friendly” products have used IMO’s in their recipes for years, as it was originally considered a fiber. Many companies truly believed IMO to be a fiber, and proudly and accurately labeled it as “ isomaltooligosaccharide” on their nutrition labels until recently when it was concluded that IMO’s did in fact raise blood glucose— and therefore could no longer be considered a Dietary Fiber. When that announcement was made, and IMO received well-deserved bad press, companies scrambled to rename the IMO ingredient on their labels to dodge public scrutiny while they began the long process of reformulating their products to remove IMO's. The government gave companies a generous timeline, after which those who were using IMO’s could no longer count it as Dietary Fiber in their Nutrition Panels. In the meantime, before the deadline, many companies chose to mislabel IMO’s as “Soluble Tapioca Fiber” or “Prebiotic Fiber” until they had a chance to reformulate with a true fiber. The truth is, IMO and Soluble Fiber (whether derived from corn, tapioca, potato, etc…ours happens to be derived from tapioca) often have the same starchy starting material. This is the reason why companies chose to mislabel their IMO ingredient as Soluble Tapioca Fiber, etc. The important difference, and the reason one is approved as a fiber and the other is prohibited from being labeled as such, is in the finished product resulting from how these starches are processed. IMOs are a glucose polysaccharide with polymer lengths of 2 to (n) (dp2 – dpn). By themselves, IMOs are sweet, which is why many companies thought it was a perfect “fiber” for their keto bar formulas. The IMO gluco-polymer consists predominantly of alpha 1,4 and alpha 1,6 bonds which are partially digested, resulting in blood sugar spikes in many people. In the processing of true, accurately-labeled Soluble Fiber (tapioca in our case), the small polymers dp1 and dp2 are removed. The result is a resistant dextrin, which is a fiber composed of digestive resistant glucose polymers of dp3 and higher. As a result of exhaustive scientific research, the government has approved this resistant dextrin to be labeled as a fiber. You may see companies label their soluble fiber ingredients as “resistant dextrin”, and this is accurate as well. Needless to say, all of this is very confusing for customers. The somewhat good news is that the deadline for large companies to completely remove IMO’s from the dietary fiber section of their labels (and the labeling of them as a fiber in the ingredients), was January 1, 2020. Easy to make too. They look and taste like normal brownies. They are great with walnuts in the mix. I have been looking for a low carb brownie mix for a long time. I tried various "keto recipes" and mixes. Most of them have almond flour in them and they are not brownie like - they tend to be gritty or just oily. These are nearly on par with Betty Crocker brownie mix. I like them chewy so I cook them longer than is recommended but my wife likes them less done. I have thought about making a brownie cookie in my waffle iron for this mix. I know they are expensive but in my opinion they are worth the price. I am glad I have one more of the boxes on my low carb diet ticked! I am VERY picky about food.
