Petra 5 è analoga ad una farina tipo OO, ideale per dolci non lievitati e biscotti. Prodotta con grani a basso tenore proteico, è adatta per produzione di Pasta Frolla, Frolla Montata, Cake, Piadine, lievitati dolci e salati a breve lievitazione (massimo 6 ore). Grazie alla ricchezza di fibre ha una capacità di assorbimento di liquidi molto elevata. Contenuto proteico : 13%.
