It will strip away any seasoning already there, it works that well. I recommend using this for deep cleans only. After cleaning, I use lard to season. Season once. Let it cool, season again an hour later. You can use oil if that's what you feel like using. Different strokes for different folks.After using the griddle, just scrape away leavings as it cools, then spray some water on it to steam the rest off. I use the provided squeegee to swipe to water away then wipe down with a lint free cloth. This keeps the seasoning in tact for next use whilst leaving you a clean griddle. **Q: Why does my flattop look orange after its cleaned and sits for a while? It took about 3 applications but the result was amazing! I read several of the reviews for this product and it definitely helped to ensure I was doing it right. Make sure the grill is at an even temperature between 300 - 350 degrees, ensure the area is well ventilated and wipe down thoroughly with water/rags when the surface has cooled. I also wore my covid mask because the harsh chemical smell during the application was powerful.
