The weight of the agar, not including the packaging, is 16 ounces. This one is so nasty tasting we chucked it and bought some for way less money at the oriental supermart. Telephone brand is the one u want! **Q: What is the shelf life?** A: I have never noticed a shelf life date for Agar Agar. But, what i can contribute is that i have been Vegan for many years and have always used Vegan Agar Agar for various food preparations. What i've done to maintain it is two things 1) keep a handy amount in a glass McCormick bottle with a Shaker top, and 2) to avoid depleting the shaker jar for more demanding preparations, i would use what i needed and resecure the original package by carefully closing it back while releasing as much air as possible and then storing it in a tough ziplock (not slidder lock) bag... freezer bags are tougher than regular storage bags, and Hefty is toughest of them all in my opinion. ...hope this helps ;) **Q: Is product produced in Japan?** A: I’m not sure. I don’t recommend this brand.
