But they are very shallow, so tipping is not really an issue for the scallops I got them for. **Q: are these suitable for oyster rockerfellar?** A: I bought these to cook with. I use artichoke instead of oysters but make them Rockefeller style. **Q: Can these be used for steaming, specifically a thick batter made of rice?** A: I bake with these so I assume steaming would be ok.
