I've always used non stick pans so I was curious how this combo would work. I baked 5 dozen muffins one day, all with a flour baking blend of coconut flour, almond flour, and oat fiber. Typically these flours stick more unless you heavily grease the pan. NOT with this pan. I first experimented with 1 pan. I didn't spray the pan. Instead I simply placed the batter in each muffin tin and baked for 20-25 min. I let them cool a bit before trying to pop them out. My first order of the pans was only 2 and I used my other pans for baking the rest of the 5dz I made. I've never had muffins come out so easily without using any non-stick product. Pleasantly surprised. In fact the way each muffin baked was different as well. Great texture, appearance was amazing, super easy clean up. I plan to order many more pans. It has weight and is a very nice pan. However, this pan is not made of stainless steel. I contacted the manufacturer and was told that it was not stainless steel, my main reason for buying it. It is a very nice pan though. I wanted stainless steel so that it would not rust. Hopefully, this will not rust and according to the manufacturer, it is under a limited lifetime warranty.
