However, if the probe measures up to 500°F (its range seems to actually be higher - 570F ?), then why is that 30 inch cable only rated for 400 degrees? The purpose of a weighted surface probe like this one would be to continuously measure temperature over time, otherwise you could just use a much less expensive handheld probe. This means that you need to figure out how to manage that 30-inch cable to keep it below the 400F degree spec.
