It sticks nicely to the counter so I can roll out the dough much more easily than trying to use wax or parchment paper. It is easy to clean, rolls or folds small enough to fit in a drawer without creasing. Why did I not know about it years ago? All frustration of chasing dough around the counter-top - especially pies and shortbread at Christmas - could have been eliminated.
